Warm Chickpeas and Broccoli Salad


I have been on a hunt for easy salad recipes that are power packed in protein and I am glad I came across this awesome Chickpeas salad recipe that is super quick to make and full of proteins. Gayatri from Culinary Nirvana is a food blogger that I follow and she has these amazing recipes that are simple to follow and full of flavor. Gayatri is a professional chef trained who is focused on healthy living, culture and good food. So here is the recipe and I hope you will enjoy making it! Stay healthy!

Serves 2

Ingredients:

Onion chopped – 1

Garlic clove chopped - 1

Red Chillie flakes – 1 tsp. (or more as per your preference)

Black pepper powder – 1 tsp.

Salt to taste

Broccoli florets steamed – 1 cup

Olive Oil – 1 tsp.

Lemon juice – 1 tsp.

Canned Chickpeas – 1 can (drained and washed… I used the fresh and cooked chickpeas )

Chopped coriander leaves to garnish.
Method:

  • Heat pan and add olive oil. Sauté the chopped garlic till golden. Then add chopped onion and sauté till transparent.
  • Add chillie flakes and pepper and chickpeas. Stir and toss it well.
  • Add lemon juice and toss.
  • Lastly add the broccoli, sprinkle salt and toss well.
  • Garnish it with chopped coriander leaves and serve it warm.
Tips:

Add feta cheese for variation

Sprinkle toasted sesame seeds if you like.

Instead of red chillie flakes you can use finely chopped red chillies.

Nigella’s Moonblush Tomatoes

There is always happiness in nature’s bounty…. My weekend started off with a good harvest from my kitchen garden… reaped beautiful cherry tomatoes and I wanted to do something different with it. I remembered while browsing through Nigella’s cookbook, where she oven dried the cherry tomatoes and infused it with olive oil, salt and thyme. Instead I used basil and it still tasted so good with my salad… especially with goat cheese … Try it out and I am so sure you will be hooked on to it.

Ingredients

·         500 gms cherry tomatoes

·          1 teaspoon table salt

·         1 teaspoon dried basil

·         2 tablespoons olive oil

Method

1.       Preheat the oven to 220°C

2.       Cut the tomatoes in half and sit them cut side up in an ovenproof dish. Sprinkle with the salt, sugar, thyme and olive oil.

3.       Put them in the oven, bake for about 5 minutes and turned it off. Leave the tomatoes in the oven overnight or for a day without opening the door.

4.       You can store it in an airtight container with olive oil.

A Simple Salad to start with....


This is a simple salad where you can have several variations. Since i am observing Lent now I thought I will stick to the basic version today. If you wish you can add to the salad shredded chicken, bacon or red kidney beans or use rocket leaves instead of lettuce... Let your imagination take over...

Ingredients:
Lettuce - 1/2 bunch
Cherry Tomatoes - 10 (cut in half)
Pear - 1 (cut into cubes)
Feta Cheese - 100gm (small cubes)

For Dressing:
Crushed Chili - 1/2 tsp
Mayonnaise - 2 tbsp
Mustard Paste - 1/2 tsp
Water - 2 tbsp
Ketchup - 1 tbsp
Vinegar - 1/2 tsp
Honey - 1/2 tsp
Sesame seeds (toasted) - 2 tsp

Serves 4 to 6

Method:
Tear the lettuce in large pieces and put it in a bowl and add cherry tomatoes and pear. For the dressing whisk mayonnaise with crushed chili, mustard, ketchup, vinegar, honey and a little water and keep aside. In a flat plate spread the lettuce, cherry tomatoes and pear and sprinkle feta cheese cubes all over. Drizzle the dressing and sprinkle the toasted sesame seeds on top and serve.
