Banoffie Pie

My first recipe for New Year is a divine combination of whipped cream, toffee, banana slices and pastry base made from biscuits and butter. This pie is easy to make, hard to resist, rich and delicious. I’ve made this twice and it was such a hit with my family and friends. I hope you are tempted enough to try this simple recipe.



Recipe adapted from Edible Garden


Ingredients:

8 digestive biscuits

1 tbsp butter, melted

1/2 cup dulce de leche or 1 can Nestlé Carnation Caramel

1 ripe banana

1/2 cup whipping cream

A piece of chocolate (optional) or Cocoa Powder



Method

Crush digestive biscuits in a food processor (or place them in a plastic bag, seal and crush with a rolling pin) -taking care not to make them too fine.

Melt butter in a saucepan or microwave.

Mix butter with biscuit crumbs.

Press into a round flan dish or tin and refrigerate it till it sets.

Warm the caramel or dulce de leche (if It’s taken out straight from the fridge) in microwave until its soft to spread.( don’t heat it)

Pour over biscuit base and spread evenly.

Slice bananas and arrange evenly over the top.

Transfer the whipping cream into a bowl and beat until thick.

Spread over the sliced bananas.

You can sprinkle some cocoa powder or add some grated chocolate over the cream layer. (I used cocoa powder)

Place back in fridge until ready to serve.










Notes:

If you are not a fan of banana, you can replace it with raspberries.

You can use crushed Oreo biscuits instead of digestive biscuits for chocolate flavor.
